Fourth of July is quickly approaching. There are many dishes that can be served such pasta salad, coleslaw, bake potato wedges, rolls, macaroni salad, baked beans, hot dogs, hamburgers, chicken, grilled onions, fish, scallops, shrimp, and steak.
The party punch is a fairly popular beverage. It requires a 2 liter bottle of 7 up chilled, one gallon of fruit punch, and ½ a gallon of sherbert (orange and lime work best). Let the sherbert thaw until it is easy to scoop. Add it to a really large bowl and mix it with the 7 up and the fruit punch. This party punch should be made 20-30 minutes prior to serving.
For those that like iced tea, brew about five to seven tea bags in a teapot or saucepan for at least 20 minutes but not longer than one hour. Put two to three trays worth of ice cubes in a pitcher and pour the tea over the ice. If the tea is too strong, just add water when serving it.
For those who like lemonade and have a juicer, here's one way to make lemonade. This version of lemonade tends to be sweet. If it is too sweet, add less sugar. First heat one cup of water with one cup of sugar until all the sugar is dissolved. Add one cup of lemon juice, which is the amount of juice juiced from four to six lemons, with the sugar water to a pitcher. Add around four more cups of water. If the lemonade is too strong, add more water to the pitcher.
Besides drinks, snacks are great to have on hand. Besides the chips, pretzels, popcorn, and other snacks that can be bought from the store there are some other appetizers that take little preparation that could also be served such as a tray of freshly cut vegetables served with ranch dressing. Vegetables normally found in a vegetable platter are carrots, cauliflower, celery, broccoli, sliced peppers, and cherry tomatoes. Two other dips that might go well with vegetables is the spinach dip and the bacon dip.
To make the spinach dip, first fix one cup mayonnaise with one cup sour cream. Then mix in one package of frozen, chopped, thawed, drained spinach (10 oz), ½ cup chopped fresh parsley, 1/4 cup sliced green onions, and one teaspoon lemon pepper seasoning. Cover the dip and refrigerate for several hours before serving.
To make the bacon dip, mix one cup sour cream, one cup mayonnaise, ½ cup bacon bits, one tablespoon chopped fresh parsley, one tablespoon finely chopped onion, and one teaspoon dill weed. Cover the dip and refrigerate for several hours before serving.
Side dishes can complement the main dish. Side dishes can include pasta salad, coleslaw, bake potato wedges, rolls, macaroni salad, and baked beans. A basic pasta salad requires 3 cups of pasta such as the colored spiral pasta, 2 cups of chopped vegetables such as carrots, celery, and broccoli, and ½ cup Italian dressing (not the creamy type). Mix the pasta, vegetables, and dressing all together to form a nice side dish.
One way to make coleslaw is to mix ½ cup mayonnaise, 1/4 cup sour cream, one tablespoon sugar, two teaspoons lemon juice, 2 teaspoons Dijon mustard, ½ teaspoon celery seed, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Then add ½ medium head cabbage finely shredded of chopped (4 cups), one small carrot (½ cup), and one small onion chopped (1/4 cup). Toss until everything is evenly coated, cover it and refrigerate for at least one hour before serving.
One way to make baked potato wedges is to get four potatoes (don't peel), 1/4 cup cooking oil, one tablespoon Parmesan cheese, one teaspoon salt, one tablespoon paprika, and ½ teaspoon black pepper, and ½ teaspoon garlic powder. Wash the potatoes and cut into wedges. Place skin down in a baking dish. Mix the cooking oil, Parmesan cheese, salt, paprika, black pepper, and garlic powder and brush on the potato wedges. Bake at 350 - 375 degrees for one hour.
One way to make rolls is to first mix 2 ½ cups of boiling water, 3/4 cup butter, 3/4 cup sugar, and 1 tablespoon salt together. Let that mixture cool down to lukewarm temperature. Next add 2 eggs well beaten and two packages of dry yeast. Sift in 7 ½ cups of flour and mix until well blended. Shape the dough into a ball kneading well. Let the dough rise in the bowl until it doubles in bulk. Punch the dough down. Form into rolls and bake for 65 to 70 minutes at 400 degrees.
One way to make macaroni salad is to first cook one and a half pounds of macaroni in salted water then drain noodles. While the noodles are hot, mix the noodles with one and a half cups of mayonnaise and two teaspoon of Dijon mustard in a large bowl. Stir in a half bunch of green onions chopped, two peppers (green and or a mix of the other pepper colors such as red, orange, and yellow) and a half teaspoon of salt. Taste the mixture and add more salt and mayonnaise if needed. Coat the top of the salad with celery salt and stir it in. Cover and refrigerate for a few hours. Serve cold.
One way to make baked beans is to first wash and soak one and a half cups of Navy beans in one cup of hot water with one teaspoon of baking soda overnight. In the morning drain. Cover the beans with cold water and bring to a boil. Cook the beans slowly for 30 minutes. Drain and put the beans in a bean pot. Add ½ teaspoon dry mustard, one cup catsup, 8 slices of bacon, one teaspoon salt, three tablespoons brown sugar, and three of four tablespoons of molasses and bake at 300 degrees for four to five hours.
There are plenty of things that can be grilled such as hot dogs, hamburgers, onions, chicken, fish, shrimp, scallops, and steak. Most people like hot dogs. Hot dogs are easy to grill. Set the heat to medium. Use tongs while grilling hot dogs and roll them around so that they don't become charred. It usually takes five to ten minutes to grill hot dogs. When grilling chicken, make sure the chicken is marinated so that it doesn't stick. It takes about 8 minutes per side to cook chicken.
Hamburgers are also great grilled, using fresh meat yields the best results, but frozen meat can be used as well. Just make sure that the hamburgers are fully thawed before grilling them. Use a spatula to flip the burgers. It usually takes about 5 minutes on each side to grill hamburgers on medium heat.
Some people like grilled onions. Cut the onion into thick slices about 1/4 to ½ inches. Brush with oil and add seasonings. It usually takes about 2 minutes of each side to cook onions. Cook the onions longer for softer onions.
To grill fish, first combine one large garlic clove minced, six tablespoons olive oil, one teaspoon basil, one teaspoon salt, one teaspoon black pepper, one tablespoon lemon juice, and one tablespoon fresh parsley chopped. Place two fish steaks (about one inch thick; halibut, swordfish, tuna) in a shallow glass dish and pour the marinade over the fish. Marinade the fish steaks for one hour, turning it three to four times. The approximate cooking time is ten minutes per inch of thickness of fish (five minutes per side). When the fish flakes, it is done.
To grill shrimp, first get the following ingredients: one pound of fresh shrimp shelled and deveined, 1/4 cup melted butter, ½ teaspoon garlic salt, and 2 tablespoons of lemon juice. Combine the melted butter, garlic salt, and lemon juice in a bowl. Skewer the shrimp then coat the shrimp with the seasoned butter. Cook the shrimp on medium heat for about three to four minutes per side.
To grill scallops, first place in a large bowl one can (13 ½ oz) pineapple chunks drained, one can (4 oz) button mushrooms drained, one green pepper (seeded and cut into one inch squares), and one pound of scallops. In a small bowl combine 1/4 cup salad oil, 1/4 cup lemon juice, 1/4 cup chopped parsley, 1/4 cup soy sauce, ½ teaspoon salt, and a dash of black pepper. Pour the mixture from the small bowl over the scallop mixture and set aside for 30 minutes, stirring occasionally. Fry 12 slices of bacon until cooked, but not crisp. Cut each slice of bacon. Using long skewers, alternate scallops, pineapple chunks, mushrooms, green pepper, and bacon until skewers are filled. Grill for six minutes, turn and grill for four to six minutes.
To grill steak, first set the heat to medium. The seasoning used should be simple such as salt, black pepper, and granulated garlic. It takes about four to six minutes for a one inch steak (two to three minutes per side) and eight to ten minutes for a two inch steak (four to five minutes per side). Use tongs or spatula to turn the steak.
Those are just some suggestions of dishes that could be served at a barbeque and one way to prepare those dishes. Some desert suggestions would be to buy some ice cream, pie, cake, cookies, or fruit if people want and still have room for desert. Hope this helps and have a great Fourth of July.
